Why simply add spinach to your omelette when you can blend it and make it a St Patrick’s day green! A great way to start your St Patrick’s day (or a healthy breakfast for the morning after when the effects of the festivities begin to take their toll!) Plus it’ll be funny to see the looks on peoples faces when you tuck into a green omelette & they’re wondering how the heck you made it green, go on, you know you want to!

Recipe (serves 1)
-2 whole eggs & 1 egg white
-35g fresh spinach
-generous 1/2 tspn garlic powder
-25g mature cheddar (slice before starting)
-2 chestnut mushrooms
-30g sweet pointed pepper/bell pepper
Optional: sprinkle of Parmesan/ chilli powder
Although this is what I filled my omelette with, feel free to use whatever veg is hanging about in your fridge needing to be used up.

Fresh organic spinach for that lovely green hue!

Directions 1- Chop and saute the peppers and mushrooms in some oil, while this is frying add the eggs, garlic powder and spinach to a blender and blitz until smooth 2- Remove the veg from the pan, add in some more oil then tip in the green omelette mixture, make sure to scrap out any bits of spinach 3-When the eggs start to set, add in your cheese and veg (and chilli/more spinach if you like), once the omelette looks like it’s set enough to fold, cover the veg with one side of the omelette then continue to cook for another few seconds then serve up with some more fresh greens and a sprinkle of Parmesan Tuck in and don’t forget to tag me so I can see your creations!
