This recipe is simple, tasty and quick. Let the tomatoes roast & pasta cook while you grab the other ingredients and then all you need to do is blend and serve up. Delicious, homemade, full of goodness pasta sauce with pizza flavours thanks to the cheese, basil & tomato combo.

You also get lovely lycopene (powerful antioxidant) nutrition from the cooked tomatoes here (better absorbed from cooked instead of raw toms) and at least 1/5 day, if not more, depending on what kind of pasta/spaghetti noodles you use. I’ve used carrot and courgette noodles in the past and also regular spelt pasta, they all taste great!

Recipe-2 portions
-360g tomatoes (approx 6 medium ones)
-2 tspn dried oregano
-3 tspns dried basil (or a handful of fresh)
-2 garlic cloves
-2 tspn smoked paprika
-2 & 1/2 Tbspn pecarino/Parmesan cheese or nutritional yeast if vegan
-Salt & pepper to taste
-Pasta of choice
optional: a drizzle of extra virgin olive oil

Use the small bowl of your food processor for the sauce

Directions
1) Preheat the oven to 180C
2) Halve the tomatoes and place on a tray in the oven for 15-20min
3) Cook up your pasta/spaghetti as per packet instructions or spiralise your own noodles as I did here with some courgettes
4) Once the tomatoes have finished roasting then pop them into a small food processor with the other sauce ingredients and blend until smooth, then pour over your pasta and sprinkle on some extra cheese if desired
