This recipe is really simple, I promise. Plus, you can get the ingredients at pretty much any shop and can use whatever fresh fruit you can get your hands on/needs to be used up.
Another major bonus is that it doesn’t require any cooking and if you don’t mind a slightly crumbly base then it can be eaten straight away, woo hoo!
It would also be a great thing to bring to a party/bbq as it’s gluten free and if using a non dairy based thick yogurt then it’s suitable for those with dairy allergies too, plus by using lots of different coloured fruit it can look really pretty so is bound to impress!

A simple spiced no bake fruit and nut tart Desserts Grainfree snack vegan

Recipe (makes 1 tart 20cm diameter)
-90g dates soaked
-200g mixed nuts and seeds
-3/4 tspn cinnamon & 1/4 tspn each of ginger & ground all spice
-approx 200g thick greek yogurt (use coconut yogurt for dairy free)
-selection of fresh fruit

Directions
-Soak the dates in warm water for 10mins
-Add the nuts, seeds and spices to a food processor and blend until a crumb texture then pour out into a bowl
-Drain then add the dates to the processor and blend to a paste, add back in the spiced nut/seed crumb and blend until a dough forms (this only takes a few seconds) then press the mix into a dish and place in the fridge for 30min to set
-Prep the fruit and grab your yogurt while you wait then add the yogurt on to of the base and top with your chosen fruits
Individual mini tarts
Another option if you don’t have a big tart case is to make mini versions by squishing the base mix into some bun cases then topping with the remaining ingredients, using silicon cases makes it easier to mould the bun shape as the base mix can be quite sticky
