Who doesn’t want something chocolatey to kick off their day? Combine it with something creamy that also nourishes you AND adds a hefty energising dose of matcha to get you going in the mornings and this will soon be one of your favourite ways to launch into the day.

I’ve been loving mint and cacao combos lately as you might have noticed with my after eight protein smoothie which led me onto this recipe which doesn’t use any special type of protein (and you can leave out the matcha if you can’t get it) meaning it’s more accessible for people to make as chia seeds, fruit and unsweetened cocoa/cacao powder are quite easy to find these days.
It’s also a good way to use up ripe bananas or that other half of the avocado you didn’t know what to do with.

Recipe (serves 1)
Base
-15g whole chia seeds
-80ml (1/3 cup) milk/water
-1/4 tsp matcha powder (omit if you can’t find it)
Top
-1 medium ripe banana
-1 tsp cacao powder
-1/4 tsp mint extract
– ½ small avocado
optional: 30ml milk/water for thinner consistency
optional: ½ tsp spirulina powder
Tip: Measure the mint extract carefully as it can be quite strong

Directions
1) Add the chia seeds to a bowl or large glass along with the matcha and milk/water then stir, leave for 5 mins before stirring again to ensure the seeds don’t clump at the bottom then pop into the fridge to sit overnight
2) The next morning, using a hand blender or small food processor, blend together the banana, avocado, mint extract, cacao and water/any other additions and pour it over the chia pudding then dig in!
