It’s that festive time of year again and while I’ve had lots of ideas for recipes I wanted to make one that was easy for people to make so they wouldn’t be in the kitchen for ages (because there’s enough of that on xmas day anyway) but also one that was very accessible in terms of ingredients and is a bit of a healthier treat too. Enter, chocolate orange spiced fruit and nut slices!
These slices are tasty, have a satisfying bite, are vegan and grain free (check your choc to be sure), contain some antioxidants from the spice and dark chocolate, plus the fruit and nuts provide fibre which can be lacking in the indulgent festive food. This all means you can feel smug when tucking into them hehe.
200g fruit & nut mix OR 100g dried fruit & 100g chopped nuts of choice (I like pecans)
3/4 tsp to 1 tsp ground mixed all spice (adjust to taste)
100g of 70% dark chocolate (organic if possible)
½ tsp orange extract (can get it in Tesco)
1 Tbsp orange choc shot (or honey/maple)
Optional: Zest of 1 unwaxed orange, baobab for sprinkling
Optional: gently toast your nuts in a dry pan until fragrant
-Chop the fruit and nuts into small chunks and add them to a bowl along with the mixed spice
-Add the chocolate, liquid sweetener and orange extract into a separate bowl and place it over a pot of simmering water, gently melt together until smooth then remove from the heat and stir it through the dry mix
-Place the mix into a lined tray and place into the fridge for around 45mins or until set. If you have it, you can use some baobab powder to dust on top of the bars, it’ll add a lovely zesty twist.
Enjoy folks, wishing you all a healthy, happy Christmas.
